Blackcurrant herring
From sea to table
Local support is a matter of the heart for us. That's why we like to buy our raw materials from the herring trawlers in western Sweden. Most of the larger herring is caught from the rich stocks in the Norwegian Sea. In the autumn, when the herring is at its best, it is seasoned or marinated and stored in herring barrels.
After many months, the herring is ripe and ready to be prepared according to our own family recipes. The herring is weighed and flavored with selected spices, onions and other vegetables. The herring is then placed in a glass jar together with a sauce, which is seasoned according to the preparation in question. The filled herring jar is then closed with a lid and labeled. The jars are then packaged and transported out into the country to the refrigerated counters of stores and to the restaurants that like to serve our herring.
